Why green pepper berries are such a delicacy

If you have been to Kampot and tried the signature dish Kampot Pepper Crab, you’ll know what we are taking about. Freshly plucked pepper is green and has a distinctive taste- one that we in Europe are not used to, because we mostly know pepper as black, dry and ground over our dishes.

Unfortunately, like a lettuce leaf, pepper berries do not remain good for more than a few days. So we harvest the berries early, preserve then in our Fleur de Sel and seal in the flavour in a vacuum pouch- all within 2 hours of harvesting. We developed this system- which is different from any other pepper berries in brine that you might find elsewhere- because people come to our farm and often ask us how they can get fresh green pepper to take home with them.

We produce just 200 units of our Green Salted Pepper Berries, so this time-sensitive delicacy is really a rare treat.

Our Salted Green Pepper Berries won a big gold star at The Great Taste Awards 2020, where they were deemed “Simply Delicious.”

How to use green pepper berries?

The taste is salty and piquant; you can use them in numerous ways to perk up dishes: in marinades for meat or fish; in most eggs dishes; fried rice or risotto; salads… the list is exhaustive and open to experimentation. We love to put them in a bowl and snack on them with a beer or glass of wine!
