None of us enjoy leaving behind the long days and warm evenings of summer, but if there’s one thing that makes it all better: it’s warm and nourishing food!

As we move into the winter season, it’s time to get cosy and start cooking our favourite feel good dishes with heavenly, heart warming spices - that’s why we have just introduced the winter spice collection:

Winter Spice Collection

This is a wonderful collection of warming winter spices which will fill your kitchen with festive flavours in the run up to Christmas.

It includes all the sweet and seductive spices you need to make your favourite feel-good Christmas recipe, we’re talking mulled wine, gingerbread biscuits and cinnamon rolls!

The collection includes six sweet spices, including two of our Great Taste award winners. Royal Cinnamon and Buffalo Ginger both won 2 stars at The Great Taste Awards 2021 for being “outstanding”.

Buffalo Ginger

Our ginger is absolutely perfect for making baked goods like gingerbread biscuits! It is also heavenly in warming stews and curries, chutneys and sauces. It is an heirloom ginger variety, famous for its fruity and herbal aroma, it’s a complex ginger, bursting with flavour. It elicits a powerful heat and incredible floral note.

The Guild of Fine Food judges described our Buffalo Ginger as “Wonderfully characterful and vibrant and would be a delightful addition to so many dishes. An absolute delight.” As the judges said “We can imagine this would be delicious when cooked in food.”

Pemba Cloves

Our cloves are packed with a punch, perfect for mulled wine, punch and gingerbread. A deeply moreish, sensational and heavenly aroma, partnered with a bright tingly sweetness. It's the perfect full-bodied addition to meats and roasted vegetables. They can also be ground onto desserts for an extra zing and an absolute must-have for any festive recipe.

Sweet Allspice Berries

These sweet allspice berries have been ground to make the most beautifully powerful sensation: a rich sweet and smoky scent with a flavour to match. This spice has a smoky warmth and comforting sweetness, with a rich flavour which can be paired with an infinite number of recipes. Infuse it into your pumpkin pies, festive desserts, stews and sauces, spice up your cocktails and teas, and jazz up your meats and BBQs. It’s a fabulous base for bolognese, chillies and curries too.

True Star Anise

These flavourful and aromatic wonders will delight your palate with liquorice and honey. Their flavorful and aromatic sensation can be used in both sweet and savoury dishes. Toss them into your stocks, broths and braises, chuck them into your boiling rice water, and use them in your mixes for tea, mulled wines and cocktails. When ground they are an essential ingredient in Thai curry blends and make a great addition to cakes and baked goods.

Royal Cinnamon

Our cinnamon has a sensational sweet and spicy flavour and a heavenly profile of honey and citrus will make you feel warm and cosy all over! The sweetest and brightest cinnamon we have ever tasted, it’s utterly delicious. This is the ultimate seasoning companion for all things sweet: baked goods, cakes, desserts, yogurts and smoothies! It also adds a new dimension to chai’s and coffee.

It definitely stunned the Guild of Fine Food judges, they “felt that as a cinnamon spice this was delicious, better than we had previously experienced and would relish using this in many different ways.” And they added “ A really unusual and characterful cinnamon, displaying a fresh and vibrant flavour and no dull powderiness. A surprising and interesting spice that we can't wait to get cooking with.” Another judge also said “ We would love to cook with it and think it is extraordinary and unusual.”

Bourbon Vanilla Bean Powder

Our vanilla has sweet notes and just smelling it will give you a mood-enhancing effect. Perfect for desserts, adding sweetness to drinks, marinades and vinaigrettes. We especially like using it in whipped cream and custard bases, where it won't dissolve but continue to infuse flavour as it sits, with visible subtle flecks characteristic of vanilla bean.

Our favourite winter drink: Pumpkin Spice Latte

Have you ever tried making your own pumpkin latte? If not, now is the time! It’s absolutely delicious and incorporates four of our single origin spices from our winter collection!

Ingredients

  • 2 tsp pumpkin purée

  • pinch of ground cinnamon, plus extra to serve (or use pumpkin spice)

  • pinch of ground ginger

  • pinch of allspice

  • pinch of vanilla

  • 30ml espresso or strong coffee

  • 250ml milk (any will work)

STEP 1

Put the pumpkin purée in a large mug. Stir in our winter spices and espresso.

STEP 2

Heat the milk in a saucepan on a low heat until hot and pour into the mug.

Stir to combine everything, and add an extra sprinkle of cinnamon on top and voila!
