Judges Comments:
A very fruity and aromatic ginger powder with a few earthy notes. On tasting it's instantly quite astringent but this quickly develops and is quite complex. The heat builds gradually and remains for a while with good spiced notes...as it fades you're left with a warm throat sensation which lingers. There is quite a citrus finish. We can imagine this would be delicious when cooked in food.
A good colour and a bright, freshness on the nose. A delightfully bright and punchy ginger, with plenty of spice and heat. Wonderfully characterful and vibrant and would be a delightful addition to so many dishes. An absolute delight.
Further seasoning wisdom:
Buffalo ginger (named after the Buffalo for having big shoulders) comes from the mountains of Northern Vietnam in a region called Cao Bang. It is 100% ground ginger, dried with hot air.
Our ginger is wonderfully different from your generic ginger spice where the skin is removed during the production process. The top secret ingredient with our Buffalo ginger is that we keep the skin on. The mixture of the skin and variety creates a coriander, strong character, which allows for a deeper, more fruitful flavour - increasing spiciness and creates a herbal sensation.
