Our Cobanero Chilli is a rare and really quite special Mayan chilli varietal only grown in the mountains around the city of Cobán, Guatemala. Fruity like a ripe tomato, sweet, slightly smoky and spicy. Perfect for anyone who appreciates a true Chilli flavour. They add a bright, rich and warm spice unlike the one-dimensional heat of your standard crushed red pepper.
Add it to: spice rubs, marinades and salsas. Infuse in Olive oil. Sprinkle into sauces and stews

Lovely, smoky, fruity aroma to the flakes. The flavours sing out both in the fruitiness and the smoke once the flakes begin to hydrate in the mouth. There is a long gentle wave of the chilli warmth.
There's a lot going on for a single ingredient. Fruity and smoky notes work well together and the heat rolls out very nicely. Would be an excellent thing to have in the kitchen.
Cobanero chillies (also called Coban chilli) are a small conical shaped fruit that typically only grows to one inch in length. The small red pepper has been an integral part of the local's cuisine for centuries and feature in the national dish of Guatemala, kak'ik a delicious warm and spicy turkey stew.
On the vine, the chilli slowly turns red and is picked at full maturity. Cobanero chillis are dried whole and then lightly smoked giving them their deep red colour and rich smoky flavour.
