Grilled Aubergine, Feta & Pecans with Köfte Baharat
Deeply savoury and bursting with flavour, Köfte Baharat is a traditional Turkish spice blend. A classic, savoury blend of chillis, garlic, cumin and allspice.
Our Köfte Baharat blend was made by our partner Ahmet and his family's 4th-generation spice business in the Istanbul spice bazaar.
Method
Preheat the grill and lightly oil a baking tray. Arrange the aubergine slices, drizzle with olive oil and season with BoTree Fleur de Sel and BoTree Kampot Black Pepper.
Grill for 5 minutes on each side, or until golden.
Meanwhile, mix the feta, garlic and a glug of olive oil in a bowl.
Toast the pecans for 2 minutes before chopping to bring out their rich, nutty flavour.
Place the aubergine on a plate and spoon over the feta mixture. Scatter over the chopped pecans and fresh mint leaves. Drizzle with the pomegranate molasses, then finish with a generous sprinkling of BoTree Köfte Baharat.

1 Aubergine, sliced
75g Feta
1 Garlic Clove, chopped
6 Pecans, chopped
A small handful of Mint
1 tbsp Pomegrante Mollases
