This coarsely ground sumac delivers complex and delicious flavours, with bright, fresh berry flavours and a zesty citrus finish that is almost sherbety - reminding us of the acidity of certain old-fashioned British sweets. The level of fruitiness is particularly striking and the salt is barely there, but underpins the other notes. We could imagine using this in sweet contexts as well as savoury.

What a precise bold sharp acidic and almost mint like aroma, and when tasted this drifts in and envelops the palate with a fresh zingy flavour note.

Growing wild in Turkey, Gaziantep, these sumac berries are chopped, packed in salt and cured. The pip and flesh is stone ground whole and dried. The sumac is then rehydrated and salt is added. This gives a soft texture rather than dry powder.This process is done for preservation of flavour and colour.
