There's a delightful clear scent of mango on the nose and on the palate with the sharpness and sourness to be expected of ground mango powder. The judges could imagine using this in many different recipes and ways.
We all enjoyed the bright zingy flavour and could see the versatility of it.
Our wild annatto seeds have a mild, pleasant vegetal flavor, reminiscent of carrots or beets. When raw, they have a heady menthol aroma. The seeds are valued for their natural red colour, which makes them a perfect addition to chili, risotto and other rice dishes and baked goods like red velvet cake.

Our sweet, warm, rich Caribbean Bay Leaves are hand-picked at origin at Belmont Estate on the island of Grenada. Completely different from the better known bay laurel leaves, this versatile ingredient adds depth and complexity to stews, curries and baked goods.
Substitute for standard bay leaves cinnamon or nutmeg in any recipe. It's also very convenient for making marinades, rubs and blends, including classic jerk seasoning!

These dusky green leaves pack real flavour. When sucked, you get a wonderfully rounded, intensely green, herbaceous flavour and smell. We then tasted them infused in warm milk adjusted to room temperature - and the flavours were absolutely beguiling. The leaves give a gently spiced fragrance and flavour that are 3D in the nose and mouth. The flavour journey you go on when you taste the infused bay leaves is really special.
This is beautifully prepared bay with a perfumed aroma. It is very strong in flavour, floral and, again, perfumed. It is lovely and would add character to many a dish.
We adore the delicate leaf, and the aroma that is released when rubbing the leaf between the palms, the scents of bay and almost-clove are stunning. Tasting the leaf in the warm milk, there are clean flavours of bay, clove and delicate spiced medicinal notes too.
Grown in Tanzania this is a raw cacao powder with a sharp, earthy and fruity profile. It will ignite both your sweet and savoury flavours with a robust and seductive taste sensation.

These exquisite seeds come from the ancient white flowered caraway, that grow in the luxurious oasis of Fayoum in central Egypt. They are labeled “king” caraway due to the plumpness of the seeds and boldness of their flavour.

Wonderful large seeds with a good aroma. The flavour is very well rounded with waves of different flavour notes coming through from citrus lemon to aniseed with a slightly woody finish - these sing of quality - pure simple and delicious.
From the depths of Guatemala’s forests, this cardamom has a complex zesty flavour. These herbaceous yellow pods come from a more mature harvest than green pods, creating a sharper and fruitier profile.

These highly aromatic chilli flakes promise much and deliver as promised. Smokey, rich and potent, the flavour is full and rounded with a lingering chilli warmth that dissipates slowly and with great charm. We loved the succulent texture too...
A smoky, fruity chilli product with a gentle warmth and tingle on the tongue. There is a hint of the salt on the end, adding to the length and interest of this product.
We loved the balance and level of heat. The chilli did not dominate on the palate and there was a gentle savoury note. We found the gentle heat worked well and delivered an impact that coated the mouth and lasted a while but did not dominate. Savoury notes were evident. This would be a versatile ingredient and would complement anything.
Our Cobanero Chilli is a rare and really quite special Mayan chilli varietal only grown in the mountains around the city of Cobán, Guatemala. Fruity like a ripe tomato, sweet, slightly smoky and spicy. Perfect for anyone who appreciates a true Chilli flavour. They add a bright, rich and warm spice unlike the one-dimensional heat of your standard crushed red pepper.
Add it to: spice rubs, marinades and salsas. Infuse in Olive oil. Sprinkle into sauces and stews

Lovely, smoky, fruity aroma to the flakes. The flavours sing out both in the fruitiness and the smoke once the flakes begin to hydrate in the mouth. There is a long gentle wave of the chilli warmth.
There's a lot going on for a single ingredient. Fruity and smoky notes work well together and the heat rolls out very nicely. Would be an excellent thing to have in the kitchen.
Our Kashmiri Chilli Powder is an heirloom variety grown in Kashmir. The chillis are prized for their flavour and vibrant red colour, which adds a beautiful hue to rubs for Tandoori meats and stews like Rogan Josh.
The rich colour and bright, sweet taste is a welcome addition anywhere you might use cayenne pepper. Ours is a little hotter than others you may have tried!
These chilli flakes have a smoky, honeyed profile. They will surely bring excitement to an array of dishes with their warm and delicate aroma.
With a fruity, bright flavour and moderate spice level, Silk chillies are a terrific alternative to crushed red pepper flakes in both raw and cooked dishes. They are also virtually identical to and can be substituted for Aleppo pepper.

Rich, fiery red and pleasing size to the flakes. Sweet, fruity and smoky notes, lifted by a hit of salt, a warm heat gently builds in the back of the throat and lingers with a comfortable glow. Not harsh or fiery in any way. There is a freshness that is commendable. The sunflower seed oil brings a juiciness and a complementing seedy savouriness. Levels of salt are expertly judged.
Attractive vibrant appearance with thoughtful preparation. There is a clean fruity aroma. A good fruity woody flavour with a good heat. A lovely chilli flake.
