This vibrant peppercorn starts off with a fruitiness which is pleasing and then the heat begins to grow and it keeps on going! A great product with loads of depth and vibrancy.

There's a gorgeous aroma to this pepper both whole and ground. There is certainly dramatic heat on the palate, which initially stops the perception of the fruitiness, but after a while, the delightful fruity notes come back into play on the palate. An excellent white pepper.
Fresh and vibrant with a punchy yet not overbearing heat. It lingers on the palate developing as it does but this isn't ferocious at all. Quite delicious and well balanced.
Description and Use: The natural enzymes in the outer husk (pericarp) are removed leaving a pure piperine intensity without adding (much) flavour. Best used when seasoning foods that already provide good taste. The piperine warms up your taste buds and jumps straight to the back of your palette, significantly magnifying your food flavours without interfering with them.
When you just need to magnify existing food flavours use our White Kampot Pepper.
Great in White Sauces, and on fish, used extensively in Asian cooking.
To understand our White Kampot Pepper try a small piece of the cheese without the pepper and you will get the cheddar taste for 25-30 seconds, then try another piece with ground White Kampot Pepper, the taste will be dramatically enhanced and will taste for much longer.

This is a pretty and attractive blend of herbs and spices, which is aromatic and enticing. It has attitude and punch. There are many layers of flavour which develop and dissipate. There is some powerful heat, intense sour notes and warm tones. The salt threads through it all well - balancing out the bullies and moderating the blend. Clever stuff.
A varied blend with a complex flavour and aroma. There is heat and fragrance from the pepper, with layers of interest underneath, good quality spices and everything really well balanced with the salt. This has been put together with thought.
A bold aroma from this little pot of spice - led by pepper, cloves and other warming spices. On the palate the pepper is perfumed and fragrant - the other spices back up the heat, there are layers of spice, warmth, slightly numbing clove and with a sweet salty back note underpinning the whole.
Description & Use:
Well its all a bit of a secret, we can say that its 40% Kampot Pepper, herbs and dried spices and 60% Kampot Fleur de Sel. Monsieur Buchot can not be persuaded to part with his secret concoction.
When you are using salt and pepper, just use this instead. The blend is particularly good on the grill (fish, meat or vegetables). Fantastic on baked Pasta dishes. Gluten and Nut free.

Stunning. Fruit fragrance, soft undulating heat with perfumed aromatics. The salt level is so well judged. The finish isn't harsh at all - it delivers a wondrous warming effect. . We love these pepper berries. You have perfected perfection.
Gosh, this is good pepper - fragrantly aromatic in the most vivid way, with an intense but balanced heat that never overwhelms, but lingers on the palate with the most delicious warmth and mild citrussy tang. The hint of salt only serves to highlight its flavour. A pepper so good, one almost wants to eat it on its own.
What a stunning flavour note of red berries and stone fruits, and we love the way in which the salt from the ferment has remained to complement the peppercorns further.

Coarse grain sparkly crystals of a uniform shape and size, with some clumping. Vibrant on the tongue with a depth of flavour and mellow richness without being overpowering. Good persistence of flavour and pleasing on the palate, great at enhancing meat flavours.
The salt marshes of Kampot are on the far south coast of Cambodia in the crystal clear waters of the Gulf of Thailand, a short cycle ride from our farm. The fine sea salt blossom is the purest and most valuable type of sea salt. It forms only in extreme heat and low humidity into flower-shaped salt crystals.
To preserve the fragile structure the salt is harvested by hand using special salt rakes.
Kampot Fleur De Sel is one of the finest finishing salts in the world.

This deep amber sauce has a wonderfully punchy fermented fish nose to it. The flavour is savoury and umami with a rich but clean fish flavour. The fish and umami notes have length and there is a rounded flavour. It tasted nice on its own and it would be a great ingredient in cooking. This product seems more assertively fishy than many commercial fish sauces and as such displays considerable character.
Made from wild-caught black anchovy and sea salt from our neighbouring island of Phú Quốc, Vietnam. Single-press Red Boat 40°N is barrel-aged using a centuries-old fermentation tradition. No preservatives or MSG. Just unsurpassed quality and flavour.
The traditionally crafted fish sauce is matured in wooden barrels for one year. Grade N is an industry standard that indicates the protein content and quality of fish sauce. Commercially available fish sauces are usually less than 20° N. Red Boat is 40° N.
Use this fish sauce “neat” over roasted salmon, halibut or scallops, toss with sautéed greens and lemon or blend with butter and smear over a freshly seared steak or lamb chops. It’s particularly good with lime, Red Kampot Pepper and palm sugar as a dipping sauce or salad dressing.

This is an attractive, olive green pepper mix - once ground, the pepper blend was distinctive with a good hit of pepper and salt. The pepper element was fresh and lively and long lasting. We felt this would be great to elevate and complement many dishes.
This pepper is fragrant and almost herbal in aroma. We really liked the addition of the fleur de sel and felt it tempered the flavour. An initial gentleness in the mouth leads to a fiery aftertaste. There is a herbal note to the taste that we enjoyed.

These are beautiful-looking black peppercorns. When crushed they have a unique citrussy aroma. On tasting there is, of course, a powerful level of heat but there is so much fragrance. That perfume and some citrus linger on the palate along with the heat to add depth and complexity and those flavours keep on coming. Peppercorns that keep on giving. These are stunning and would enhance any dish or any meal. What a fabulous, outstanding condiment!
A floral, citric aroma that is almost meadow fresh. Floral notes come through in the tasting, too, along with a dancing heat, and lasting aftertaste. These really pack a punch, and all components marry up well. We could think of no way to improve them. Truly delicious, even on their own.
